Basic Crepes Recipe – French Special

Crepes are one of the most versatile recipes, but they can be intimidating…Don’t worry, though, with this easy recipe, you can say goodbye to the days of lumpy batter and pan flipping that ends up with more batter on the ceiling and floor than actually cooking! This recipe uses a blender to create a wonderfully smooth batter, and we suggest using a spatula to carefully flip these beautifully crispy and golden crepes. Speaking of that golden glow, if you’ve had issues in the past, use this tip of wiping the hot pan with butter to create a nice, even colour. Similar to pancakes, but a star in their own right, crepes can be made sweet or savoury, making them popular across the globe. In fact, even though they have French origins, on Pancake Day (Shrove Tuesday) in the UK, crepes are the most popular type of pancake to make and are usually enjoyed with just sugar and lemon juice. Simple, but perfect!

Basic Crepes Ingredients:

  • 4eggs
  • 1 1/3cups milk
  • 2tablespoons butter, melted, or oil
  • 1cup all-purpose flour
  • 1/2teaspoon salt, if desired

How To Make Basic Crepes :

In medium bowl, beat eggs slightly. Add all remaining ingredients; beat until smooth.

Heat crepe pan, or 7 or 8-inch skillet over medium-high heat until hot. Grease pan lightly with oil.

Pour scant 1/4 cup batter into hot pan, immediately tilting pan until batter covers bottom. Cook until edges start to dry and center is set. Turn and cook other side until light brown. Fill with desired filling.
